I'm sure you all know of this, but I have been wet marinating my ribs the night before then pat drying them the next day and then applying my dry rub in two intervals before they go on the smoker. The results are amazing.
Wet marinade: 1 bottle of dark ale 1 tbsp of garlic 1 tsp of salt 1 cup of brown sugar 1 tsp of lemon pepper mush it all together et voila. anyone else have any "wet marinade" recipes, post up! :-) |

I've been using this one for a while and it works extremely well on spares or BB's.
1 quart beer 2 cups brown sugar 1 cup cider vinegar 1 tblsp chili powder 1 tsp cumin 1 tsp dry mustard 2 tsp hot red pepper flakes Bring to a boil, remove from heat, and cool. I know some folks complain of haminess, etc but I let them sit in this concoction for about 24 hours. I then put my own rub on right before throwing them on the smoker. They turn out fantastic everytime. No hamminess detected. Silly Bubba Loves that Que! |
