Pork, due to the variety of cuts and ways of preparation. (I was thinking about saying scallops, but eventually I'd want to wrap them in bacon, so...)

And I hereby willingly donate my share of the world's lamb supply to Kevin Kruger. I have no desire to ever taste that stuff again.

Ribeyes and pot roasts and chili, oh-my! Briskets and burgers, strips and sirloins, short ends and burnt ends, and did I mention corned beef?
Filet mignon, tri tip, and the best one of all - prime rib - rare with creamy horseradish and juice running everywhere!

I love me some pigs, but if there is juice running from your pig, you're probably getting sick.

Plus, I'm going with the Catholic rule here, seafood doesn't count as meat. So I get beef AND fish! "Shrimp is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh, shrimp-kabobs, shrimp creole, shrimp gumbo. Pan fried, deep fried, stir-fried. There's pineapple shrimp, lemon shrimp, coconut shrimp, pepper shrimp, shrimp soup, shrimp stew, shrimp salad, shrimp and potatoes, shrimp burger, shrimp sandwich."

I'll toss a friendly challenge to you on these points.

trichinosis had been all but eliminated in domestic pigs. I'd say rare pork carries about the same risk as rare beef.

The question is which ANIMAL would you chose. Catholics might be confused about what constitutes meat, but I'm pretty sure they know an animal when they see one. In fact I think Noah had a pair of shrimp follow his ark around.

Exactly..."meat" would have allowed for that loophole.

Anyhow:

Pork - 14
Beef - 14
Chicken - 3
Fish - 2
Lamb - 1
Undecided - 3

Beef. Ribeye steak. You will never ever pry those from my hands. Ever.

Bacon is a killer. Can anything beef wise be used to substitute?

Melted beef fat mixed with a little butter, maybe some woody herbs, drizzled over slices of ribeye. Yeah. not giving that up.

I would go with chicken.
Grilled chicken,bbq chicken,fried chicken, sauteed chicken,chicken sausage,chicken soup,pulled chicken,etc. The list goes on and on.

Anything chicken can do, pork can do better (with the possible exception of roadside chicken).

I would miss steaks, but I would have to go with pork!
