At the end of the original edition of Smokestack, there's a section called "The Places" that lists the names, addresses, etc. of 49 barbecue joints around the country. In the new edition, the list has dwindled to 27. Did all 22 of those joints go out of business in the last decade, or were they removed for some other reason?

Frank Stewart, the book's photographer, actually compiled the updated list. I can't tell you what happened in each case. But I do know that we didn't seek to eliminate any businesses. I think your conclusion is correct.

But, for what it's worth, other places have opened since then. And, as I am constantly reminded, there are a lot of good places we missed.
