Larry, thanx for your reply!. How much charcol did use to complete your cook at the 245-265 range(initial set-up and how many additional)? I plan on an initial "Weber chimney" full of UNLIT Charcol and then add 1/2 "Weber chimney" of LIT Charcol on top of the unlit. Is there a better way?

Richard, I used just about a half of the charcoal ring full of Kingsford. I load my WSM up a little different than most people do when going low and slow. Here's what I do. I load up the charcoal and wood, assemble the WSM with sand in the pan. Then I load whatever meat I'm cooking, put the lid on and then light a small spot of coals right in the center of the charcoal with a hose torch. Then I put the door on, and leave all vents 100% open until I get a dome temp of 175º, then I close the bottom 3 by 75%. The temps will initially drop several degrees, but will then gradually climb and stay in the 245º-265º range. Unless the winds are really really blowing, I won't have to touch the cooker again until it's time to take the meat off. Hope this helps. Larry Wolfe |
