The smoked thigh meat will be used for pot pies, the smoked legs and wings will be used for bean or split pea soup. Ham was used this morning for breakfast along with some nice fried eggs and toast. I love leftovers better than when the food was originally cooked.

My wife makes an awesome turkey curry. Part of the breast meat is saved for that every year.

I have a huge stock pot which is at the ready when I carve. The carcasses go in immediately and cook during dinner. During clean-up I sweat onions and celery then these get into the pot when I remove the carcasses. Leftover side vegs go in in the pot (this year that was creamed spinach, artichoke hearts, baby peas), then I remove the meat from the bones and reserve. Into the pot goes wild rice from Minnesota and a few diced sweet potatoes and some leftover stuffing (cornbread, wheat bread, white bread, diced apple, currants, toasted pecans, celery, onion, herbs), a little gravy and, when the potatoes are tender, the meat from the carcasses gets returned. Done.

There is more to do with the leftover turkey that was carved; not sure what things I'll do this year.

That Turkey chili sounds good. Do you have a recepie? Today's dark turkey meat & pea soup turned pretty good. I still have some white meat left over. Can I use this for chili?

tm, sure you can use turkey white meat in your chili. In mine, I try to keep the pieces in the
range of 3/8'-1/2" cubes max. Your favorite chili recipe will work, just use the turkey in place of your regular meat, or mix it 50/50 with your regular chili meat.

With the turkey I roast the carcass (thank you Kevin K) and make a stock for soup. Some will be used in turkey noodle, some in pasta fagioli soup. The ham will be used with breakfast, snacking straight, and navy bean and ham soup. I love nibbling on skillet fried ham.

I can honestly eat turkey sandwiches everyday of the year. I love to buy cheap soft white bread, put some mayo and add hot turkey (straight from the microwave). I usually accompany the sandwich with something spicy (raw jalapeno, pickled jalapeno, or doritos with tapatio). We never seem to have enough turkey left over.
