Wow this was my first turkey ever in the WSM. I brined her in an apple brine for 12 hrs. Dried for about 4. Then i cooked her at 325-350 with 2 chunks of apple wood for about 3 hrs. I cooked it inverted at first, then flipped towards the end. It turned out incredible! Im so happy right now....and stuffed...lol

gotta love the color of a smoked turkey. Big Grin

I usually start my turkey in the brine monday morning after the brine has cooled over night, and I'll take it out on wednesday morning (48 hrs) so its had plenty of time to dry and redistribute the salt. it helps to have an empty fridge.
