My brand new WSM arrived just 2 days before Thanksgiving. No real time for a test fire. We were having 10 guests for dinner, and we were doing a 20 pound turnkey. As I have never cooked on one before, my wife was understandably a little skeptical as to how it would turn out. Above the din of me clanking the smoker together, I could hear my wife voice the occasional “what are we going to do if it’s ruined?” or “shouldn’t we try this some other time when we don’t have so many for dinner?” Undaunted, I kept plodding along. I can now happily report the turkey and the WSM were the star of the show, and that my wife is now totally convinced. Many guests said it was the best turkey they have ever tasted. Very moist. I know they weren’t kidding either, because the turkey was picked clean. No leftover turkey sandwiches, no turkey pot pie...nothing. At least I have the carcass for soup!

That will be some of the best turkey stock you have ever tasted.

My experience was much the same, although I have about a dozen cooks under my belt. I was a little leary about cooking for more then just the usual crew. I did a 13 lb turkey and a 10 lb half ham. Turkey went on bottom ham on top. Needless to say, I had a ton of drippings (probably 3-4 cups) which the wife made KILLER gravey from. Both turned out beautiful and tasted as good as they looked. The compliments borderd on embarassing. I guess thats just something you have to get used to. Smiler

I have 3 boys so leftovers are never a problem Smiler Buy a few buns and the boys eat ham/turkey sandwiches for a few days. I like the leftovers too. It was the first holiday that we hosted and I'm looking foreward to christmas now.
