I am a WSM Amateur, but would be completley lost without this website and forum. HAPPY THANKSGIVING TO ALL!!

I have defrosted enhanced bird. I want crispy skin, so should I air dry the turkey for a few (18)hours?

I am not cooking until tomorrow, so I can let it air dry almost 18 hours. I was planning on just putting herb butter under and on the skin since it is pre-brined, and I'm going for a high heat cook. Also, should I butter the bird right before the cook, or before I put it into the fridge to air dry.

Sorry, don't worry about the brining, just cook it high heat like it says and you will have the crispy skin.
