I bought a 22 qt. Rival roaster oven to cook a 24 lb. turkey for 18 family members. Dinner is at 2:00 today.
I brined the bird for 18 hours using 1/2 apple juice and 1/2 water, salt and brown sugar.
Put the bird in the prreheated oven at 325 degrees after connecting my weber thermometer.
Bird was 38 degrees when it went in the oven.
put bird in at 8:00am and at 9:45 the internal thigh temp was 135. I turned the temp. down to 240. Turkey was at 175 thigh temp and 166 breast temp at 11:00am. Three hours... and I was expecting a 5 or 5 1/2 hour cook. Tested with other thermometers and all read the same. and all tested within 2 degrees yesterday in ice water and in boiling water.
