I want to smoke a bunch of turkey legs. I remember a while back, a post about the turkey legs at carnivals and fairs, and how to achieve that great taste. but I can't find it.

Michele, very tasty things these legs. Take care not to over boil the legs. If they're smaller legs cut the boiling time in 1/2. Another tip, I double the honey & steak sauce and brush some of the mixture on the legs during cooking, gives it that extra tang! Damn, I'm going to make some of these this weekend too.

I just smoked a turkey leg not too long ago.
I cooked it at a high temp until it was at a 170 I believe and then it was still pretty rubbery skin so I grilled it just long enough to get the skin crips and sauced it on the gasser. Skin turned out pretty good and I can't complain. It wasn't a carney turkey leg, but it was still pretty darn good. "Mmmmm, making bacon on the beach." Homer J. ichele-there is a great recipe on Food network.com. No boiling,just rub and smoke. Search for smoked turkey legs. They taste just like the fair(and they don't cost $7!)
