I want to smoke a bunch of turkey legs. I remember a while back, a post about the turkey legs at carnivals and fairs, and how to achieve that great taste. but I can't find it.
Anyone remember this? Or have any thoughts?

Michele, very tasty things these legs. Take care not to over boil the legs. If they're smaller legs cut the boiling time in 1/2. Another tip, I double the honey & steak sauce and brush some of the mixture on the legs during cooking, gives it that extra tang! Damn, I'm going to make some of these this weekend too.

I just smoked a turkey leg not too long ago.

I cooked it at a high temp until it was at a 170 I believe and then it was still pretty rubbery skin so I grilled it just long enough to get the skin crips and sauced it on the gasser.

Skin turned out pretty good and I can't complain. It wasn't a carney turkey leg, but it was still pretty darn good.

ichele-there is a great recipe on Food network.com. No boiling,just rub and smoke. Search for smoked turkey legs. They taste just like the fair(and they don't cost $7!) Cool
