smoked two 4 pound breasts for thanksgiving. i wanted to have plenty of leftovers to share and for sandwiches! one breast got a apple spice rub, the other got a herb rub. they were finished about 40 minutes before the rest of the dinner was ready. i just double wrapped them in foil, paper bags, a towel, then popped them in my cooler. the bird got lots of compliments, and the WSM idled nicely for the whole smoke.








Classic WSM, Smokey Joe, 22.5 one touch gold, 22 WSM.

still chowing on the leftovers! the rubs i used are john henry's apple rub, and an herb rub from williams-sonoma. i have used both with turkey and chicken before with top notch results.
