smoked two 4 pound breasts for thanksgiving. i wanted to have plenty of leftovers to share and for sandwiches! one breast got a apple spice rub, the other got a herb rub. they were finished about 40 minutes before the rest of the dinner was ready. i just double wrapped them in foil, paper bags, a towel, then popped them in my cooler. the bird got lots of compliments, and the WSM idled nicely for the whole smoke.

thanks don! still chowing on the leftovers! the rubs i used are john henry's apple rub, and an herb rub from williams-sonoma. i have used both with turkey and chicken before with top notch results. Classic WSM, Smokey Joe, 22.5 one touch gold, 22 WSM. |
