I want to do a turkey for thanksgiving this year. I am a little worried and unsure. any tips on size, temp, and time to cook? i saw a thing to make beer can turkey has anyione done one of those? Any advice is appreciated thanks

I too am planning on my first turkey smoke in an 18" WSM. I want to practice one before Thanksgiving.

I plan to use the Whole-Turkey Self Basting easy method linked by Donny Anderson in this thread.

Question: What are the thoughts on brining? I usually brine my conventional birds. Is it a good idea with the smoker method?

Grant - if you're wanting to go the brining route(and I highly recommend brining) you probably want to steer clear of a self-basting bird. I really like the Apple brined turkey recipe from the 'Cooking Topics' area of this site. Pretty simple, and very tasty!
