A thorough search of both cavities of this year's 20-pounder yielded a turkey neck, but no giblets. This is disappointing, as I had planned to use the giblets in the gravy.

Has anyone else in the community ever been similarly deprived? Alternatively, as the bird is already on the kettle, am I potentially in for an unwelcome discovery when I carve later today?

I've been buying mostly utility birds the last couple of years, I don't always get them either. I've noticed some packaging says roughly 'Check cavity, may contain giblets'.

I wonder if they are always included with premium/name brand birds?

Found this:
quote:
...USDA allows poultry processors to use labels stating that giblets may be missing — or, "without giblets" (commonly known as "wogs" in the poultry industry). Giblets may be lost or broken or may have been pulled from the processing line for not meeting inspection standards. Birds packed without giblets are required to bear labeling that states the giblets are missing. Likewise, the phrase "giblets may be missing" is a flag to alert the consumer that giblets may not be present...
here.
