I'm doing an 18lb-der brined,cooker around 250 with water in the pan and minion method.I'm looking for what ya'll think the time per lb should be?We plan to eat at 2:00 and I dont want to put the bird on too early.I'm thinking 30min per lb.Right or wrong?Thank you for a great site it has helped me so much you guys are GREAT (HAPPY THANKSGIVING TO ALL)

I too like to cook my turkeys low and slow. If you plan on eating at 2pm I would suggest you start between 7-8am. I generally cook 12-16lb birds and they take between 4.5-5.5 hours with a dome temp in the 245-265º range and using sand or firebricks in the pan. I have done a couple 20+lbers and they take about 6-6.5hrs.
