I don't know about the rest of you out there, but this is one tired old man tonight.
I have been going since 2:30 this morning and am finally running out of gas. I had this major league brain fart and decided to invite people over for Thanksgiving dinner and told the bride that I would take care of making sure the house was up to speed both inside and out. I recently let my gardener go due to tough times and cutting back on things that I can do myself, hell it's 1000 bucks a year I save, but goodness I never realized how many leaves there were to rake, and you really need to do it twice per week to stay on top of it. Anyway, I got the yards done yesterday and got started on the inside this morning. Went to the store with the bride and picked up things that we had forgotten the last two days and it was back to finish off the house. Prepped all my appetizers this evening, took my turkey out of the brine that he was in for 36 hours, washed her really good patted her dry and put her back in the fridge until tomorrow morning. Even cut up some fresh sage and rosemary and folded the herbs into some soft low salt margarine that will go under the skin and on the skin prior to putting on the WSM.
As tired as I am, I think I'd do it again as it really made me appreciate what many of you out there do all the time. Just like everyone else, I plan on taking lots of pics for my first brined turkey and look forward to my next one.
