Looking for ideas. I've got about 4 cups of great stock leftover from my gravy, a whole carcass, and a breast carcass from the smoker. I'm thinking smoked turkey quesadillas. There's soup, chili. What else do you folks do w/ your leftovers and carcasses?

TJ's has Hatch roasted green chilies at $.79/can (thanks Chris Brown!), I picked up a half dozen...thinking something SW....white bean smoked turkey chili???

I always make soup--the pot is on when the turkeys get carved. I often save a breast half for mole.
