Hey,

After reading several recipes and comments here, I tried my hand at making a couple of boneless/skinless turkey breasts on Thanksgiving.

I used the apple brine recipe, but modified it slightly by using maple syrup instead of brown sugar. I used Mesquite, which I thought would be a nice counterbalance to sweetness of the apple and maple.

Success! The smoked turkey was a big hit! I look forward to doing it again!
