Hi All. I had planned on cooking 12lb Turkey in the WSM this year, but it looks like the weather isnt going to be very good. Just wondering if anyone has ever tried smoking the bird for an hour or so on the WSM and then finished it the oven? I would like the turkey to have some smoke flavor, but I dont think I will be able to keep a constant temperature going in the WSM due to the high wind and rain. Thanks for any suggestions.

Jim if you're not set on doing a 'high temp' bird, I would go for it in the elements.

I cooked 3 birds 2 weeks ago in the middle of a cold, windy rain storm and they turned out great.

But if you prefer, like Bryan said the oven finish will work fine.

I'm with Larry, tuff it out if you can. The weather forcast is not guaranteed bad weather. Wink At least not here. I think they just chuck darts at a dart board most days to come up with a so called forecast. Roll Eyes
