I'm getting the wsm prepped for tomarrows combo turkey/ham smoke. I foiled the water pan as you would to catch and save the turkey drippings. But then I got to thinking, is the ham/turkey juice going to be worth making gravy out of, and secondly, Is there going to be enough room in the water pan, (I made the dish a bit deeper) but I'm still not sure how much drippings the ham will produce. Any advice would be greatly appreciated.
