Just buy the clay saucer that fits INSIDE your water pan and foil the whole thing a few times. That way you won't have to fiddle with your setup when the time comes that you need to use both grates.

Just my two cents. I now use the clay saucer and foil the top only. Put that in my water pan. My water pan is foiled outside only. I only refoil once in a while. The bottom grate does sit on top if the claysaucer but this has not been a problem for me when I have cooked using both grates. The bottom grate sits so close to the water pan anyway. After the cook I take the foil off the saucer and throw away. Cleanup is complete. I personally found it easier to control temps without water(which I used for my first 2 cooks). Again this is just my opinion.
