First large cook, 6 slabs BB--suggestions?|

All--
I'm doing my first cook for more than 6 people, and need some suggestions. I have an 18.5" bullet, and will be doing 6 racks of baby backs. My thinking is to rub them and roll with skewers or twine, and use the MM to light and smoke. My question is around positiong. I'm guessing I'll start with 3 slabs on each rack, shooting for a 3-4 hour cook, and switch their positions about halfway through. Is that necessary? I'd appreciate any suggestions you have--my experience up to this point is only on the top rack. Thanks, Drew |

If you use a rib rack you can get all 6 slabs on the top grate. Then you won't have to fuss with using both grates. Even rolled, you probably can get all 6 on top. Larry Wolfe has a post somewhere here in which he shows his use of racks to do multiple slabs. I don't know exactly where it is, so try to do a search.
Depending on your temps, the cook may take longer than 3-4 hours. Switching positions isn't necessary IMO Good luck. Just sit back and wait for the compliments. Found Larry's post. here it is Dave |
