This evening I made a turkey meatloaf on the WSM that turned out far better than I ever expected. The basic recipe was:

1.25 pounds ground turkey (I just bought the regular stuff, not the "lean")
salt
1 tsp paprika
1/2 tsp cayenne
1 tsp black pepper
big pinch of cumin
1 egg
1/3 cup coarsely diced onions sauted in olive oil
1 slice diced stale white bread soaked in 1 TB milk



I mixed all the ingredients together, formed a loaf and put it on a cast iron pan. I covered the loaf with a simple homemade bbq sauce made from ketchup, smoked paprika, garlic powder, mustard powder, and some hot sauce.


Next, I smoked the meatloaf in my WSM at ~300-325 for about 1 and a half hours using a couple of big chunks of alder wood.

After letting it rest for a few minutes, I sliced and served it along with corn that I smoked on the WSM and coated with fresh garlic butter.

Not trying to brag, but the results were spectacular. I rarely make meatloaf because I find it pretty dull, but using the smoker made all the difference.
