Ya'll, this is a dear departed friend of mine's recipe. I just made some tonight and when I tasted it, my eyes rolled back in my head. This one is worth trying!

1 head cauliflower
1/2 green pepper
1/2 red pepper
1 small red onion
4oz cheddar cheese
1/2 lb crisp cooked bacon, crumbled
3/4 cup Miracle Whip
2-4 Tblsp sugar
Pepper to taste.

Cut the florettes from the cauliflower head into small bitesize pieces. Dice the red onion and the peppers. Mix in cheese, Miracle Whip, pepper and sugar. Lastly fold in bacon crumbles. Serve or refrigerate.

This salad is perfect just this way. However, I toy with it from time to time. I use a full pound of bacon. I also usually just use a full red pepper instead of buying two, and throw in chive rings or frozen peas for the green!
