I LOVE potato salad…this is my WSM version I threw together tonight.

2 left over Russets baked in the WSM during a high heat cook, pealed, diced into large chunks

3 nice slices buckboard bacon, fried, diced

1 hardboiled egg (I use the nuker thing), diced.

1 stalk celery, rough dice

2 green onions, chopped fine

1 TBS red onion

Dash celery seed

White pepper

Grey sea salt

Dash Ground Thai red pepper flakes - still have some that I dried after last year’s harvest

Small squirt yellow mustard

1 tsp or so wasabi (love this)

Enough mayo to bring it all together.

Made your potato salad with roadside chicken for 4th of July BBQ. My whole fam said it was the best they've ever had.
