Don's hanger steak post inspired me. I grilled a skirt steak earlier this summer and it was terrific. I hope you enjoy it.
Skirt Steak with Chipotle Marinade 1 skirt steak Corn tortillas Marinade: ½ can of chipotle chilies with adobo sauce 2 tsp ground cumin 1 tsp ground black pepper ½ tsp salt 2 Tbsp olive oil Juice of ½ lime Put marinade ingredients in blender. Blend until smooth. Place skirt steak and marinade in large zip-lock bag and refrigerate overnight. Next day, take steak out of bag, wipe off most of marinade. Fire up the grill medium-hot to very hot. Oil the grates and grill the steak until crispy on the outside and just done on the inside: medium. Let meat rest, and tent with aluminum foil for 15 minutes. Meanwhile, quickly toast tortillas on grill until just grill-marked. Grain on skirt runs length-wise, so cut skirt in four-inch lengths, then cut each length thinly across the grain. Place a few strips of steak, along with some grilled onions, roasted tomatillo salsa (or your other favorite salsa), and a dollop of guacamole on a toasted tortilla. Wrap it and eat it.
