About once a month, my wife and I will go on a little spree, she'll spend all week collecting recipes and we'll spend saturday gathering ingredients and cooking. Usually we'll do japanese, but since my parents were taking us out for japanese on friday, we planned to do korean.

It certainly was less expensive. Rather than tuna, scallops etc, we bought pork tenderloin and beef short ribs. Kimchi was purchased at a little Korean restaurant, and fried fish cake, and a couple of new pastes (Korean soy bean, and black bean) came from a nice Korean grocer.

menu:
fried golden mandu(dumpling), with dipping sauce frying:

mandu on plate

shrimp and clam scallion pancake:

kimchi, fried fish cake, cucumber salad, and condiments:

Chop chae(noodles)

grilled spicy pork

beef ribs, grilled sweet potatoes hot off grill

beef ribs, grilled sweet potatoes sliced and plated


this is the second time I've tried grilling short ribs. The first time I had some success doing a high heat grill. all the needed was for the knob of meat to be removed from the bone and sliced against the grain. So I was pretty confident I could have some success on my second try. This time around, the ribs weren't as meaty, which made it difficult to get nice slices of meat. I doubt I'll bother doing short ribs like this again since any steak can be marinaded, grilled and sliced to a similar effect.

The pork on the other hand came out great. I sliced the tenderloin on the bias into 1/2" rounds and pounded these down to 1/4" disks. I was never much of a pounder (I liked to impress myself with how thin I could slice things) but pounding has an amazing effect on the final tenderness of sliced meat. I read that it bashes up the muscle fibers, and I'm a believer.

My wife chop chae is outstanding, if anybodies interested in the recipe I can post it in the sides section.

unfortunately no, these were a pretty off the cuff thing that I thought I'd try. I was rocking a pretty high heat grill and they got nice and brown in a hurry but were a tad underdone in the middle. I just happen to read a Paul Kirk recipe where he par boils them for 10 minutes prior to grilling. It also looked like he cut them into rounds so the cook up more uniformly. There's certainly some potential here, I can see a nice dusting with rub when them come off and a honey butter dip.

Nice looking spread JB. Nice slicing on the short ribs too. The chop chae looks great. I love how those sweet noodles balance out spicy Korean bbq.

I grill sweet potatoes a lot since my wife loves them too. I simply peel, slice into 1/3-1/2" rounds and grill them either low direct or indirect. It all depends on what else I have on the grill. I used to toss them in a bit of oil and season with S&P but find that it isn't really necessary. They're flavorful enough by themselves and the dry heat cooking intensifies the sweetness. The grilled sweet pots act as a nice foil to the usually salty/spicy protein I serve them with.

Great spread! Everything looks wonderful! You're pics are making me hungry.

We try to do a Korean theme for our monthly Euchre parties at least once a year. I love doing beef bulgogi with thin slices of tenderloin or sirloin; we do the lettuce wrap thing with it.

I think I need to spend some time and find a good Korean BBQ place around here. I know it wont be hard, there are many of them, I just need to start eating out more often. Sometimes I prefer to find what I like first, at a restaurant, then try to replicate it at home. I usually butcher a recipe or two at first when I go into it blind, not knowing what the results should look and taste like.

this fish cake was purchased at a korean grocer. I love the ones we are occasionally serve at a korean bbq joint, these aren't quite as good,but they satisfy my craving.

I've been to a place here in buff, and one in nyc and I was surprised at how similar they were in menu and quality. I'd be willing to bet any place you try will be good.
