I've been wanting to try this recipe since Larry posted it a few weeks ago. We had some friends over last night so this was a good excuse to give it a go....Turned out great and everyone liked it a lot.

whew...for a minute there I thought you cooked with the chimay!

I'll never forget my first chimay. I was with 3 others at a nice restaurant. my wife order one,we all tried it and like it so much we all ordered one for ourselves. When we got our check, our beer tab was almost as much as our food! Eeker

I went to Sam's yesterday - the best looking package of chucks they had was two, totaling about 6 pounds, so I figured I'd just cook them both.

They're on the WSM now, over Royal Oak lump with a scant handful of hickory chips for just a little bit of smoke flavor.

It's almost 3:30pm, the chucks have been cooking since about 11:10 this morning and they're just about ready to come off the smoker and into the pan. I'm going to finish them in the oven, looking to eat sammiches for dinner tonight.

Well I too got the itch after reading seeing this made. So after the wife went to work. I went to work. I gotta say this tastes as good as the name sounds. After it was finished I decided to take a shot at pizza with so-so results. That needed more heat. To me it tasted the same as any pizza I have done in the oven. I know it is another topic but I thought I would share.
