The plate looks like **** but my taste buds and belly tell me I done good tonight. Made shrimp burritos, fish tacos, refried beans and spanish rice. The wife made some nopales (cactus) but forgot to put it on the plate. When I was at the Mexican market some pork chorizo caught my eye so I bought some and I threw it on the grill while we ate. I'm so full right now but I want some more!!! It was that good.

How'd you make the rice? Was it a mix? I'm looking for a good rice recipe for burritos, etc.

I used this recipe. http://mexicanfood.about.com/o...es/r/SpanishRice.htm

I added about 2 TBS chipotle in adobo sauce I had left over from making the salsa and also added some taco seasoning.
