"Cold smoking or curing is done at very low temperatures, ideally between 24°C - 28°C (75°F - 85°F). As the SmokePistol™ produces very little heat, it is possible to maintain these temperatures."

I've been waiting for ProBBQ to start distributing the WSM Stacker.

Supposed to come out this quarter and be distributed through Smokinlicious. One of the reasons is that I would like to add the height so that I can do vertical hangs (they actually have a hook and hangers for the ProQ).

Should be good to vertically hang fish for cold smoking. I'd like to smoke my own Whitefish for example.

ProBBQ also has two products to make cold smoking a little easier. You can also by them direct, available at Hawgeyes BBQ about $50. Take a look:

Pretty cool, follow the thread/url. Any out there who has had a chance to demo?

Here's a thread on smokering:

Cheese smoking:

GrillKicker looks like an inexpensive option with possibilities too.

I have had 2 Smoke Pistols for a couple years now, and have mixed feelings about them, honestly. I have the regular model as well as the high heat model. It's a good concept and works in general. The one downside that I have experienced with it is that the smoke chamber and orifice require frequent cleaning on smokes longer than a few hours due to carbon and ash buildup restricting the flow of smoke into one's smoker. I've had to shut it down, allow it to cool off, remove the unit, scrape out the buildup and restart with a fresh cartridge. The cartridges that are used are wood pellets encased in a cardboard tube. They last several hours apiece, provided the buildup doesn't slow you down. Another consideration is that you are married to their wood source, similar to a Bradley smoker. The good news is that their cartridges are not prohibitively priced. That's been my observations about the product, good luck and I hope this helps.

Best Regards,
Scott
