This is my first Smoke Day smoke so I decided to do some sholders. Rubbed them down yesterday and put them on late last night, about 10:30. Filled that bad boy up to the rim with lump. Put some in the starter and I let the fireworks begin. I love the light show you get when the lump is in the chimney starter!!!! Woke up once at 2:30am and the WSM was humming along at 230. Gave a little refresher to the water pan and went back to bed. What a delight to wake up in the morning to the wonderful smell of "Q". Neighbor was out getting his paper and shook his head, waved and smiled. He never understood why I did the all nighters until he sampled some of the pulled pork I have done before!! Weather is absolutely perfect!! Pulled them off a little past 11:00am this morning, foiled and wrapped them in towels for about an hour. Pulled the bones with one easy tug and got to shreddn'. Got some slaw and sauce and can't wait for the guests to arrive to devore some beer and pulled pork..
Happy Smoke Day to all!! Brian Yorkville, IL |
