Just got my shirt today, really happy with the quality of the shirt (hanes tagless). It'll be part of my wardrobe for years to come.

I dont have anything set in stone yet, but I'm thinking of doing a HH brisket flat. By the looks of the map there is going to be a LOT of smoke in the air this weekend!

I'm planning on the following:
Couple racks of BB Ribs with my favorite rub/sauce
A Few ABT's with the mixed filling (
Possibly a fattie (did my first fatty on mothers day and was blown away. Oh the possibilities...)
Possibly a sausage link or two.
Wife will make a pie of some sort (that will be delicous)
Still thinking about sides, with all the smoker produce not sure there will be much room for sides.

Work! Frowner I've had 2 days off since Easter Sunday, Mothers day and Monday after MD. They posted us for this weekend and Memorial day. On the bright side, Memorial day is = to tripple time. Double time plus our holiday pay. Cool Making money hand over fist, but it's all work and no play these days.

Two butts are purchased and just waiting for the rub to go on tomorrow morning. Sounds like we might even do a few ribs alongside.

Can't wait for the PP leftovers, I'm dying to try ABTs.

Well..since I have to be at work on Smoke Day V, today is my smoke day celebration! I put on a pork butt roast to smoke on the kamado at 1215. Low & slow till it becomes pulled pork.

Have a great smoke day you all!

It's the same day as my daughter's christening. I'm not really into that stuff, but hey, it's an excuse to throw a bunch of meat on the smoker.

I'm doing about 12lbs of butts, including one marinated in achiote and one regular one. I'm going to make some kielbasa and smoke it. And I'll have a few pounds of lamb shoulder stuffed in there. And probably some chicken too, why not?

Abotu 24 hours to go before I start assembling the smoker and planning my attack. Can't wait.

I am grilling up a tri-tip roast on Friday night, and Saturday will be Buckboard and Canadian bacon on the WSM. I have about 5 lbs. of each that has been curing for almost 10 days now. I will likely smoke some baked potatoes after the bacon is done and maybe throw on some chicken wings/drumettes if the coals are still hot after all of that is done.

Looks like I am going to do a pork shoulder!! Got the rub already made and the "butt" chillin' in the fridge!! Can't wait to rub it down and get to smokin'. Looks like it will be hit and miss with the rain so I am praying for the "missing" part. Happy smoking to all!!!

I originally thought I'd do beef ribs because they're so good, but I realize I need to start cooking some of my freezer stock. So I'm going to do a partially deboned leg of lamb instead. Should be interesting cuz I don't cook much lamb.

Baaaaa,
Chris

I had planned to cook a couple of butts, as usual. But a sale on spare ribs changed my mind, so I'll be cooking 3 slabs of spares.

Everythings all thawed out and chilling in the fridge. Rubs are made and sitting on the counter. Smokers scrubbed and looking good. Waiting for tonight so I can fire that sucker up. Gotta stop before I drool on the keyboard! Big Grin
