Just got done taking the butt off the WSM. It's wrapped and in a warming oven at 150 degrees until ready to serve around for lunch. Looksand smells great.

Very impressed with the ability of this unit to hold temp. It was rock steady at 225 when I went to sleep and right there when I woke up.

Morning Pete,
The WSM is a magic machine,isn't it. It does the work,we take the credit! Put my spares on yesterday morning at 1100 at 250 deg for a 5-6 hour cook. Made a cuople of adjustments to get it down to about 235. walked by every hour or so and it held steady all day. Almost boring but sometimes boring is good.

Magic is the perfect word! People were amazed that the WSM was lit the night before,and held temps all night. Of course,I had neighbors all day going "Is it dinner yet!?". Big Grin
