I'm in - but may be underwater down here in Atlanta! Doing two butts with different rubs.

I am making two pork butts on my new 22 WSM and my "mother-in-law smoked beans" (believe me it's a long story behind that name!). I anticipate about eight adults and six children. I'll have the Ranch Kettle working while we're waiting for the Q.

New here but not to smoking. A 7# pork but for pulled pork sammiches went on at 8 am this morning. It was followed by a 5# bottom round roast and two yard birds. Almost 8 pm here and everything but the pork butt is in the cooler.
I removed the water pan after taking the other meat out. The WSM is now at about 350 at the lid and the butt is still hanging at around 166. It will get there eventually but I'm ready for it now.

Hi Larry...thanks for the link. I'm doing 4 high heat brisket flats today for the folks at work. I'll be sure to post a few pics.
