I picked up some of this stuff on a whim, most things I've read about it say that its a fast disolving mild salt, used mainly for finishing. I was wondering how it would work for pre salting meat when using a saltless rub? How would it compare to kosher salt?

It should work just fine. It may dissolve a bit more readily than kosher but that is of no concern when pre-salting.

It is used as a 'finishing salt' mainly because of its color and texture. This doesn't preclude its use for cooking though.
