Anyone no how to make this stuff? I've actually never tried it but turkey is basically being given away now since Thanksgiving. Also any good turkey sausage recipes would be appreciated. If anyone has any info it would be appreciated!

the recipe in Ruhlman's Charcuterie has some potential. I tried it last year with some success. It was my first time making sausage so I suspect some of the problems were mine and not the recipe.

I did find that the leg meat was difficult to get all the sinew out of. This year I think I'm going to use the breasts and mix them with pork butt.
