This past weekend my fiancé took a walk down to the local farmers market with our little Boxer pup and brought home some very nice looking veggies. One of the locals gave her a couple fist fulls of fresh rosemary, which smelled very very good. Last night, she had grad school class so I was left to fend for myself, so I decided to make use.

Ingredients:

1 16oz Rib Eye
3 TBS Fresh Rosemary, chopped (more or less, depending on your affection for rosemary)
2 cloves of garlic, (chopped)
1 TBS Olive Oil
1 Tsp Black Peppercorns
1/2 Tsp of Crushed Red Pepper

Removed Ribeye from vacuum seal and ran my cheapo tenderizer over it. Then I salted the rib eye separately from the paste.

In a mortal&pestle I combined all of the ingredients above, sans salt and Ribeye, and proceed to make a nice, fresh, greenish yellow paste that smelled absolutely wonderful.

I rubbed the paste all over the ribeye and let it warm to room temperature on the counter while I fired up the grill.

I reverse seared the ribeye to 120* internal before hitting it on direct for a few. Came out nice and medium rare.
