Hi! I have been hanging around here absorbing as much information as possible for a while now. I figured it was about time I acted neighborly and said hello. I have had my WSM 18.5" for 3 years now. I have cooked up pork butts, briskets, beef ribs, pork ribs, and chicken. I am making pastrami for the first time today and I can't wait to try it! I think I will be doing a practice turkey next -- I always wanted to try smoked turkey for Thanksgiving.

I did this turkey last year, it came out great, and was super easy.

The pastrami was good. I need to leave myself a little more time for the cook next time though. I will definitely be trying it again.
