Hi all,

I have been reading this site for years and finally decided to sign up. I still really want a WSM, but through this site I have learned how to use my one touch gold to make some pretty good BBQ. I love the wow factor when people realized that I smoked pulled pork on a simple kettle holding 2 fire bricks and a thermometer shoved in the top! Seeing me use something familiar has caused a few friends to start experimenting with their old kettles and that is what BBQ is all about. Wink

I am still getting through cooking all the the traditional BBQ meats and this community is great for tips and ideas. I cooked my first ribs on Saturday, and the high heat brisket is my next goal. Some recent trips to Texas, North & South Carolina, have helped give me a goal to shoot for.

Also, I want to say thanks to Chris for this site and the BBQ charts he made up. They have really helped me organize myself and refine my technique, and are worth the effort just to have a record.

Thanks for all your help so far and I look forward to finally contributing.

Welcome to the site. As a fellow Kettle only Q'er I get what you saying about the "Wow" factor you get from your friends. Be sure and let us know how your Brisket comes out. Mine have been both pretty good and just OK. Justs take practice and patience.

Welcome Jared, It's all about the Q. I have the WSM and a gas BBQ. Because of these forums I really want get a kettle next year. Maybe Santa is listening.

Thanks Mac I will let you know. I am planning on doing it in the next month or so.

I really hope you get a kettle Tim. It is all I have ever used and really enjoy it. It is extremely simple but light years ahead of any other charcoal grill.

Meanwhile, I am hoping Santa get ME a WSM! haha
