Hi everyone,

Just got a new 18.5" WSM and plan to break it in with with a couple of racks of spares, using this recipe: http://www.virtualweberbullet.com/rib2.html

This is my first smoker, and I understand they run a bit hot the first couple of uses. Any tips or tricks? Thanks.

Just got mine on friday and used it yesterday for the first time and didn't have any problems with it running hot. good luck!

Beat the learning curve and buy a Guru, then you can focus on perfecting rubs, sauces, etc. Hope this helps.

I run my WSM with the waterpan completely full. It keeps the meat moist and helps to stabilize the temp of the smoker. The bullet tends to be very stabile anyway.
