Hi everyone,
Just got a new 18.5" WSM and plan to break it in with with a couple of racks of spares, using this recipe: http://www.virtualweberbullet.com/rib2.html This is my first smoker, and I understand they run a bit hot the first couple of uses. Any tips or tricks? Thanks. |

Beat the learning curve and buy a Guru, then you can focus on perfecting rubs, sauces, etc. Hope this helps.

I run my WSM with the waterpan completely full. It keeps the meat moist and helps to stabilize the temp of the smoker. The bullet tends to be very stabile anyway.
