Hello from Denton, Texas...

After a revelation earlier this year, I decided to get out of the gas grilling game and go back to charcoal...

The short story, I picked up a Weber Char-Q for a camping / RV trip. That was enough to get me hooked on charcoal again. Not too long after that a 22.5 inch Weber Kettle appeared on our doorstep. Making it much easier to cook for 6.

Wound up finding this site...

After getting a bit ambitious on the kettle, several smoked and beer can chickens, I did a brisket on the weber kettle. It worked out great, but I was tied to the grill for 7 hours!

So I'm now the owner of a big WSM and it's looking like this is the weekend for BBQ.

Fortunately, I have a very understanding wife who REALLY likes the food I've been making so I've managed to get away with it so far.

Oh and wish me luck, I need to get two weekends of practice in since I'm smoking for 20 in two more weeks. Eeker

Hey Zak! Greetings from Collin County! I have a brisket going on my 22.5 WSM tomorrow. It is a lot easier (more freedom and less burnt meat) to smoke on the big WSM than any other smoker I have used. I love mine already! I've only had it a month now.
