I finally solved a problem that has been vexing me for some time. The problem is what to do with large comp meats after they've been removed from the cryovac. We like to get the jump on things as far as trimming, injecting, rubbing but some times I try to balance this with then need to keep things neat in the original packaging.

I've been searching high and low for a big, sturdy bag that could hold a 14# packer or a flat slab of spares but have not had much luck.

Wouldn't you know it, I stumble upon a perfect solution when I just about gave up hope. Ziploc sells huge bags that they market as home storage solutions. I don't have the box handy but I think the large storage bags were 20"x24" and swallowed everything we put in them. Additionally they had a double zipper so they aren't going to leak.

they cost me around 5 bucks for 4 bags, but they were more than worth it.

They are really good. They don't leak and they easily fit a brisket. I use them mostly to make Montreal Smoked Meat!

Ah, probably the Big Bags XL, those things do rock. Chris mentions them in the all about brining article out in the cooking section topics. I would have pointed you to that sooner but I didn't know you were looking.

Todd or JB, do either of you know where to get 2 gal ziplocks locally? I've looked in Tops, Wegmam's, BJ's and Super Wallmart and nada..

nope, same deal Bill, only been able to find the XL's. Gotta be somebody in the land of oz that has free shipping on them though.

We get them at Costco in Canada. I know the store carries different product in Canada and the US but it might be worth a look.

I have used the Big Bags XL and have had a few of them leak. The leak was at the bottom at the side of the bag in the fold. I think it was just a bad batch as I took them back for exchange and the new ones didn't leak.

McMaster-Carr has press to close type bags up to 28" X 30" in various thickness. See page 1532 on their web site.

I bought a case of 2 1/2 gallon glad zip bags a while ago and we use them for everything.

Two gallon ziploc

Two gallon freezer

Buy one of these and you'll be good for a long time.

Yep - use them all the time. The real big ones I used for brining the Thanksgiving turkey. Place the whole turkey in and dump in the brine. I typically use a large pot for support. I always have from 1 gallon on up to XXL on hand.
