I recently picked up these two knives at an estate sale, and paid $30, along with some other items. Just wondered if anyone knows their age and or quality. I tried to research them, but I guess they are vintage and didn't find any info. I had been wanting a good slicing knife, and hope the 10" one fills the bill. Both are very sharp. Thanks! I can't speak to their age, but the quality is HIGH. Spend time putting a good edge on them if they need it and they will stay sharp for a long time. Henckels Solingen doesn't mess around. The Friodur process is interesting, check out this video. I'm sure you got them for alot less than half price.

I'm guessing that these were made before Henckels offered so many different grades/styles. I hope to smoke a turkey breast soon, and will give the slicer a test run. 18" WSM, Blue Performer, OTG, Red OTS, Red Q220, Rancher |

To preserve the wooden handles, rub them with either mineral oil or pure tung oil (not Formby's which isn't pure).
