well, i've had good success with using my
one touch to do butts and briskets.
i use a coal holder for one side. the rest of the charcoal grill i use aluminum foil to shut
off air flow except through the coal area.
then i make a aluminum foil barrier that hangs from the top grate down to the coal grate. i put this a few inches away from the coals.
this prevents direct heat from the coals hitting
the meat and lets any air coming in go through
the coals. i barely have to open the lower vents and i get a good burn from the coals.
works great.
