The rubber coupling (I think this is the right word) worn off my Stoker probes. Can I harm the probes using without this covering?

I don't know if it will harm the probe.
What I did when the sleeves came off my probes was to use heat shrink tubes. The tubes will only last a few cooks but they are easy to replace. I purchased a long length of heat shrink from Fry's and cut them to 2". They have an added benefit of fitting through the grommets easily. Ray Why play it safe when you can flirt with disaster. |

They are silicone tubing. See if you can find some surgical tubing or perhaps r/c plane fuel line tubing (silicone of course). That should do the trick.
