What's your opinion of warehouse (Costco, Sam's, BJ's) meats? The prices are hard to beat but how is the quality relitive to a butcher?

First off, you have to realize that Sam's etc. are not in the meat business. They are resellers just like almost everyone alse. Most small butcher shops are buying boxed meat from the big producers such as IPB, John Morrell, Seaboard Farms etc. and it's the same meat as Sam's, but they'recutting it and presenting it in a fancy case.
If your guy is cutting whole carcasses, or buying directly from someone who is, you're on to something. If not, he's buying the same stuff as everyone else.

Bottom line, I buy almost all of my meat at Sam's Club.
