Thanks in advance--I'm learning a lot from your posts and look forward to buying your book. I've noticed a number of different barbecue styles reading this and other sites. You're a master at this process, so my question to you is how much of barbecue is an art form, and how much is science? Do you tend to go by formulas as you do this, or is there a time when you have to go with your instinct and feel?

At this point I always go with my instinct.
I think the science is a good place to start, and you sure need to understand it, but to be real good you'll have to turn it to an art. Your creativity is what can set you apart from everyone else.
